Rustic Peach Pie with Himalayan Salt

1. Before you make the crust, you should freeze the processor bowl & blade. After it is ready, you should add the solidified coconut oil, flour, a sprinkling of Himalayan pink salt and pulse.
2. Now, you should add the water TB by TB until the time you see it has developed clumpy dough pulse by pulse.
3. If you want to do it quickly, then you can spoon the dough into a small springform tart pan, and then press it into the pan and make the crust by molding it in using your fingers and place it in the freezer.
4. After that, you should score 2 peaches with a cross “X” shape and drop them in the boiling water for approximately one minute.
5. Take out the peaches and peel them. Remember, they will easily slip off, but you don’t need to worry about it because, with skin, it means more fiber.
6. Now, cut the peaches and mix them with the tapioca starch, maple syrup, healthy dose of the cinnamon and a splash of the vanilla extract. After mixing them, let it be in the fridge for approximately half an hour.
7. After 30 minutes, take the mixture out of the fridge and pour filling into the crust. You should sprinkle the remaining dough crumbs on crumble’s top.
8. You can also sprinkle the coconut sugar (the pure coconut crystals) on crumble’s top, however, it is optional. After that, place the pie in an oven and set it to about 425F and bring down the heat to 375F just after. After 15 minutes of time, see if the crumble is looking golden. It can be done within 15-20 minutes, so watch it out.
